the amount of things you can do with olive oil, vinegar, salt and pepper.
julienne them all
toss with red wine vinegar, maldon sea salt (for flavor and texture) pepper, you can use any sort of oil, i prefer flax seed oil, which adds a nutty flavor and is super healthy.
for the pictured dish, i use canned, drained chickpeas and chopped anchovies (which is obviously not completely vegan, but DELICIOUS.)
